RECIPES WITH THE NERF HERDER | Butterbeer Muddy Buddies

If you're a fan of anything and everything Harry Potter, you're going to want to jump on this super easy recipe to make your very own Butterbeer Muddy Buddies (we called this Puppy Chow when I lived in Minnesota)!


All the recipes I referenced while making this said lightning sprinkles are optional, but let's be real - they're a critical and awesome part of this delicious treat, so don't skip out on them! We'll have linked below the particular sprinkles we used, but obviously feel free to use whatever you might have more local to you.



INGREDIENTS + TOOLS NEEDED
  • 8 cups of Rice Chex Mix (I would suggest getting the Family Size)

  • 11 oz bag of butterscotch chips (some bags come as 12 oz; either works!)

  • 1/4 cup of Health Bits O' Brickle English Toffee Bits

  • 1 1/2 cups of powdered sugar

  • 1/2 cup salted butter

  • 1 teaspoon vanilla

  • 1 teaspoon imitation butter flavoring or extract

    • Yes, you'll want to have this even though there is real butter in this recipe!

  • Lightning sprinkles

  • The sprinkles we used are from Confectionary House Co.


  • Microwave-safe bowls or double boiler

  • 2 large paper bags or 2 gallon freezer bags

  • Cookie sheet

RECIPE
  1. Begin by measuring 8 cups of Rice Chex Mix into a large paper bag or 2 gallon freezer bag (we like using the freezer bag personally as we found it a bit less messy with the melted butter, but use whatever you have). You'll be using the bag to mix all of the ingredients together

  2. Melt the full bag of butterscotch chips, which you can do 1 of 2 ways:

    1. Use your microwave, heating the chips in 30 second increments, stirring between each period. Once you get closer to the chips melting, move toward 15 seconds to avoid overheating the chips and causing them to seize.

  3. Melt the 1/2 cup of salted butter

  4. Add the melted butterscotch chips, butter, vanilla, and imitation butter flavoring together until well incorporated and smooth

  5. Pour mixture, along with the Heath Toffee Bits, into the bag holding the 8 cups of Rice Chex Mix

  6. Mix and shake the bag together to fully cover the Rice Chex Mix in the bag

  7. Carefully pour out the covered Rice Chex Mix onto a cookie sheet to cool

  8. Once cooled, pour your Rice Chex Mix into the same bag or another bag

  9. Pour in your powdered sugar and sprinkles, shaking again to cover all of the Rice Chex Mix

  10. Store in an airtight container (unless of course you eat it all in one sitting - we won't judge!). Should stay fresh for 2-3 days
